Makes 2 large sandwiches
Ingredients
- 1 large sweet potato
- 2 medium sized beetroot
- 1 red pepper
- 1 avocado, mashed
- Salad leaves
- Blueberry chia jam
- Turmeric & Ginger Superkraut
- 4 Wholemeal seeded bread slices
Method
- Slice the sweet potato into 1 cm thick slices.
- Slice the beetroot into
- ½ cm thick slices.
- Slice the red pepper thickly.
- Roast these vegetable slices at 180ºC for 30 minutes or until tender.
- Assemble the sandwich:
- Layout bread slices and layer with:
- Blueberry chia jam.
- Roasted vegetables.
- Avocado.
- Salad leaves.
- Turmeric & Ginger Superkraut.
Blueberry chia jam
- 1 cup of blueberries
- 1 Tbsp lemon juice
- 2 Tbsp chia seeds
Method:
- Place blueberries and lemon juice in a small pan over medium heat.
- Heat for a few minutes until the blueberries begin to soften and you can mash them.
- Take off the heat, add in the chia seeds and leave to set for 15 minutes.
- Keep in the fridge.
