10 organic carrots 1/2 tsp olive oil Salt and pepper
Pumpkin seeds Sunflower seeds Fresh mint leaves
Wash the carrots (leave the skin on). -
Spread them out on a baking tray . Drizzle with the oil and roll them around to cover. -
Roast i n a pre - heated oven at 200ºC for 20 - 30 minutes until softened and the skin starts to caramelise. Take out of oven and serve with Avocado Supergreens sauce (recipe below), seeds and fresh herbs.
