Roasted Carrots & Supergreens Sauce


  • 10 organic carrots
  • 1/2 tsp olive oil
  • Salt and pepper



  • Pumpkin seeds
  • Sunflower seeds
  • Fresh mint leaves



  1. Wash the carrots (leave the skin on).
  2. Spread them out on a baking tray.
  3. Drizzle with the oil and roll them around to cover.
  4. Roast in a pre-heated oven at 200ºC for 20-30 minutes until softened and the skin starts to caramelise.
  5. Take out of oven and serve with Avocado Supergreens sauce (recipe below), seeds and fresh herbs.


Avocado Supergreens sauce

Simply blend all ingredients together until smooth.
