This Big Vegan Breakfast Bowlis quick, simple and super tasty!
It features some gorgeous green leafy veg, wholegrain millet, spiced creamy sweet potato mash, roasted vine ripened tomatoes, avocado, a sprinkling of sunflower and pumpkin seeds, a squeeze of lime and a fresh helping of Turmeric & Ginger Superkraut, with The Tofoo Co sage & onion sizzlers – delicious!
Every Big Vegan Breakfast Bowl will differ, but here are some ideas on how to put yours together...
Put together an array of greens or leafy salad, a squeeze of lemon or lime, avocado, nuts or seeds, add a nourishing grain of your choice (millet, quinoa or brown rice are lovely options), some lovely mash, your favourite sausages and of course a good helping of Superkraut!
Turmeric and Ginger spiced creamy sweet potato mash
- 2 medium sweet potatoes
1 tsp tahini (optional)
- ½ tsp ground turmeric
- ½ tsp ground ginger
Peel and chop the sweet potato into small cubes and steam or boil until tender.
- Once cooked, drain the sweet potato and mash together with the spices and tahini.
