Rainbow Salad Ingredients
- Red pepper, thinly sliced
- Carrot, thinly sliced
- Yellow pepper, thinly sliced
- Mango, cubed
- Green beans, chopped
- Sugar snap peas, chopped
- Green cabbage, sliced
- Black beans, 1 tin rinsed and drained
- Fresh figs, chopped
- Red onion, thinly sliced
- Red Hot Firekraut
To make the salad, wash and chop all the ingredients. This can be done in advance.
Peanut dressing Ingredients
- 1/4 cup natural Peanut Butter
- 2 Tbsp apple cider vinegar
- 1 Tbsp soy sauce
- 1 Tbsp fresh lime juice
- 1 tsp maple syrup
- 1 clove garlic, minced
To make the peanut dressing, whisk together all the sauce ingredients until smooth. Thin with water if desired.

- Add all the salad contents to a large bowl and cover with peanut dressing liberally, to your liking, stirring to coat.
- Fill serving bowls with salad, extra dressing and top with Red Hot Firekraut.
Optional serving suggestions: rice noodles, chopped nuts, fresh herbs.
